Make the raspberry sauce. In a small saucepan over medium heat, combine the raspberries, sugar, and lemon juice. Cook for 3–5 minutes, mashing the berries slightly, until softened and juicy. Stir in the cornstarch-water mixture and cook for another minute until thickened. Strain out the seeds if desired, then let the sauce cool completely.

Preheat the oven to 165°C (325°F). Line a 9x9 inch (23x23 cm) baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Make the crust. Mix the graham cracker crumbs, melted butter, and sugar until it looks like wet sand. Press firmly and evenly into the bottom of the prepared pan.

Pre-bake the crust. Bake for 8 minutes, then remove and let cool slightly while you make the filling.

Beat the cream cheese. In a large bowl, beat the softened cream cheese and sugar together until smooth and completely free of lumps.
