When ready to bake, preheat your oven to 177°C (350°F). Line two baking sheets with parchment paper. On a lightly floured surface, roll out one disc of dough to about 6mm (¼-inch) thick — not thinner, or the cookies will bake up hard and snappy instead of soft in the middle.
5 Cut into shapes using star or tree-shaped cookie cutters (both hold their edges well and look great with a light icing drizzle). Place cookies about 2.5cm (1 inch) apart on the prepared sheets, since they spread slightly as they bake.
6 Bake for 9–10 minutes, until the edges are set and lightly browned and the centers look soft but no longer wet or shiny (fully baked, not raw — this is different from a gooey center). Rotate the pan halfway through if your oven has hot spots, mine definitely does. Let the cookies cool on the baking sheet for 5 minutes, then move them to a wire rack to cool completely before decorating.

Note
- If you're reheating leftovers, a few seconds in the microwave brings back that soft-from-the-oven texture, but the edges go a bit chewy-soft all over. An air fryer at 150°C (300°F) for 2–3 minutes crisps the edges back up while keeping the center soft, which is my favorite way to warm these up for the kids after school — just check early, since air fryers vary and can over-brown cookies quickly.
- You can swap the ground cloves for a pinch of ground nutmeg if that's what you have on hand, the flavor stays warm and cozy either way. Unbaked dough discs freeze well for up to 3 months, just thaw overnight in the fridge before rolling. Baked cookies also freeze well, undecorated, for up to 3 months. Store finished cookies in an airtight container at room temperature for up to a week; they tend to soften a bit more with each passing day, which around here is not a complaint.
