I made these chocolate chip muffins for the first time on a rushed Tuesday morning, and I filled the muffin cups only halfway because I was scared of overflow. Big mistake. They came out flat and sad looking, nothing like the tall bakery muffins I was picturing. The second time, I filled the cups right to the top, and that’s when the magic happened — domed tops, crispy edges, and a soft, fluffy center that pulls apart in warm, chocolatey strands. My kitchen smelled like a cinnamon-sugar bakery for a good hour afterward, and my kids were hovering by the oven door waiting.

A recipe is really just a map — a list of ingredients and steps that gets you from a bare kitchen counter to something worth sharing. But homemade muffins beat store-bought ones for one simple reason: you control what goes in. No mystery preservatives, no overly sweet glaze, just butter, flour, sugar, and good chocolate chips.

✅ Quick Tip: Read through the whole recipe once before you start mixing. Muffin batter comes together fast, and you don’t want to be digging through the cupboard for baking powder while your wet ingredients sit out.

Description

These are the muffins I make when my kids ask for "the good ones from the oven" instead of cereal. I added extra cinnamon into the batter almost by accident the first time — I was reaching for vanilla and grabbed the wrong jar — and now I can't make these without it. It rounds out the sweetness and makes the whole kitchen smell incredible while they bake. The batter is thick, almost like cookie dough, which is exactly what keeps the chocolate chips from sinking to the bottom. Bake them in a hot oven for the first few minutes, then drop the temperature, and you get that bakery-style tall top with a sugary crunch on the outside and a soft, steamy center underneath.

Ingredients

For 12 Muffins

Instructions

  1. Preheat the oven to 220°C (425°F). Line a standard 12-cup muffin pan with paper liners or grease it well.

  2. Mix the dry ingredients. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

  3. Mix the wet ingredients. In a separate bowl, whisk the melted butter, oil, and both sugars together first. Add the room-temperature eggs one at a time, whisking well after each one, until the mixture is smooth and pale. Only then gently stir in the sour cream, milk, and vanilla. Don't add the cold milk and sour cream straight into the warm butter mixture before the eggs and sugar are worked in, or the butter will seize into tiny cold clumps — I learned this the hard way on my first attempt.

  4. Combine. Pour the wet mixture into the dry ingredients. Fold gently with a spatula until just combined — about 15 to 20 strokes. The batter will be thick and a little lumpy, and that's exactly right. Fold in the chocolate chips.

  5. Fill the muffin cups all the way to the top. This is what gives you the tall, bakery-style dome instead of a flat little muffin. Sprinkle coarse sugar on top if using.

  1. Bake at 220°C (425°F) for 5 minutes. Without opening the oven door, lower the temperature to 190°C (375°F) and continue baking. Start checking with a toothpick at the 12-minute mark of this second phase, since ovens vary — most batches will need the full 15 to 17 minutes, until the tops are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.

  1. Cool in the pan for 10 minutes, then move the muffins to a wire rack. The centers keep cooking a little from residual heat, so don't skip this rest — I cut into one too early once and the middle was still gooey.

Note

You can swap the semi-sweet chocolate chips for milk chocolate, dark chocolate chunks, or even a mix of chips and chopped nuts if that's what your family likes. If you only have a jumbo muffin pan, this batter makes 6 jumbo muffins — bake 5 minutes at 220°C (425°F), then 20 to 22 minutes at 190°C (375°F). For mini muffins, you'll get about 30, baked for 11 to 13 minutes at 190°C (375°F) the whole time, no temperature change needed.

Storage: keep leftover muffins in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. They freeze well for up to 3 months — just thaw on the counter. For reheating, the air fryer at 160°C (320°F) for 2 to 3 minutes brings back that just-baked crispy edge, while the microwave (15 to 20 seconds) makes them softer and steamier but a bit more delicate on the outside. My kids prefer the air fryer version; I usually don't have the patience and just microwave mine.

Frequently Asked Questions

Expand All:

Can I make these muffins ahead of time?

Yes. You can mix the dry and wet ingredients separately the night before and store them covered in the fridge. Combine them just before baking so the leavening doesn't lose its power.

Why did my muffins turn out flat instead of domed?

This usually means the muffin cups weren't filled high enough, or the oven wasn't fully preheated before baking. The hot start is what pushes the tops up quickly.

Can I make these dairy-free?

Yes. Swap the butter for a dairy-free alternative, use a plant-based milk, and use dairy-free yogurt instead of sour cream. The texture will be slightly less rich but still good.
