I still remember the first time I tried making mozzarella sticks in my air fryer. I skipped the flour step and only used egg and breadcrumbs, and half my cheese sticks burst open into sad little cheese puddles at the bottom of the basket. Lesson learned. These air fryer mozzarella sticks come out with a crisp coating and a gooey mozzarella center. The trick is a flour, egg, and breadcrumb coating done twice, with a freezer rest in between, so the cheese stays put instead of oozing out into your air fryer basket. They're cooked in the air fryer instead of deep fried, so there's less oil involved, but that doesn't automatically make them a health food — they're still a breaded, cheesy snack, just a slightly lighter version of the deep-fried original.

  1. Set up your dipping stations Line a baking sheet with wax paper or parchment paper. Set out three shallow bowls: one with the flour, one with the egg beaten with water, and one with the panko mixed with Italian seasoning and salt.

  2. First coat Roll a mozzarella stick in the flour first, tapping off the extra. Dip it into the egg wash, then into the breadcrumb mix until fully covered. It gets messy here, and that's completely normal. Lay it on the lined baking sheet, spaced apart so the sticks aren't touching.

  3. First freeze Freeze the coated sticks for 30 minutes to 1 hour. Don't skip this step or try to rush it, or the coating will slide right off in the fryer — I learned this the hard way the first time I tried to shortcut it, and ended up with cheese puddles instead of cheese sticks.

  4. Second coat and second freeze Pull the sticks out of the freezer and dip each one back into the egg wash, then the breadcrumbs again for a full second coat (no need to re-flour). Freeze again for another 30 minutes to 1 hour, until the sticks feel firm and dry to the touch, not soft or damp.

  5. Air fry Preheat your air fryer to 390°F (200°C). Lightly spray the basket and the sticks with oil. Air fry in a single layer, in batches if needed, for about 5 minutes, then gently shake the basket and check them. Keep cooking in 1-minute bursts, watching closely, until the coating is golden and crisp — this matters more than the clock, since air fryers run hotter or cooler than their display shows, and you want to catch them golden before the cheese has a chance to escape.

  1. Serve Let the sticks cool for a minute or two before eating, since the melted cheese inside stays very hot. Serve right away with warm marinara for dipping.

You can make these ahead and freeze them for later. After the second coating and freeze, transfer the sticks straight into a zip-top freezer bag and keep frozen for up to 3 months. Cook them straight from frozen at 360°F (182°C), checking at the 6-minute mark and continuing in short bursts until golden, since frozen sticks can go from perfect to leaking quickly.

Leftovers reheat best in the air fryer at 350°F (175°C) for 3-4 minutes, which brings back the crispy shell. Microwaving works in a pinch, but it makes the coating go soft and a little chewy instead of crispy, so I only do that when I'm really short on time.

If you can't find mozzarella string cheese, a block of low-moisture mozzarella cut into sticks about 3 inches (7.5 cm) long and 1/2 inch (1.25 cm) thick works too.
