I made these coconut cupcakes for my daughter’s school bake sale, and the first batch was a bit of a disaster — I got so excited about the coconut milk that I forgot to cut back the butter, and they turned out greasy and heavy in the middle. The second try was a different story.   3. Add the softened butter and half the coconut milk to the dry ingredients. Mix on low speed until it coats the flour and forms a thick, sandy paste — this takes about a minute. Don't rush this step or dump in all the liquid at once, or the butter won't coat the flour evenly, which can lead to a denser, less tender crumb - I learned this the hard way.

  4. In a separate small bowl or jug, whisk the eggs with the remaining coconut milk and vanilla.

  5. Pour the egg mixture into the batter in two additions, mixing gently after each until just combined. Scrape down the bowl so nothing is stuck at the bottom.

  1. Divide the batter evenly between the 12 liners, filling each about two-thirds full (roughly 70g of batter per cupcake if you're using a scale — the full batch weighs close to 850g, so 70g per cupcake divides it evenly across all 12).

  1. Bake for 20–22 minutes, until the tops are lightly golden, spring back lightly when you touch the centre, and a toothpick inserted in the centre comes out clean. Start checking around the 18-minute mark, since ovens and pans vary.

Coconut Buttercream Frosting

You can swap the coconut milk in the frosting for heavy cream (double cream in the UK) if you want a milder flavour. Leftover frosted cupcakes keep in an airtight container in the fridge for up to 4 days — let them sit out for about 20 minutes before serving so the frosting softens again. Never reheat a frosted cupcake, since the frosting will just melt off. If you have unfrosted cupcakes left over, a few seconds in the microwave brings back their softness. A very short stint in the air fryer, about 30 seconds at 140°C (285°F), can work too if you want a slightly firmer edge, but keep a close eye on it — cupcakes dry out fast under direct air-fryer heat.
