  1. Preheat and prep. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners, or grease it well.

  2. Mix the dry ingredients. In a medium bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon. Set this bowl aside.

  3. Mix the wet ingredients. In a large bowl, whisk the egg lightly, then stir in the milk, oil, yogurt, and vanilla until smooth. Add the mashed bananas and stir to combine.

  4. Combine, but don't overdo it. Pour the dry mix into the wet mix. Stir with a spatula just until you don't see dry flour — a few small lumps are fine. Fold in the walnuts or chocolate chips if using.
