Peach Cobbler is a warm, comforting dessert built around sweet, juicy peaches and a soft, golden batter that bakes up around them, part cake and part crust. It’s a classic Southern-style recipe made in one pan, with the batter rising up and around the fruit as it bakes rather than being layered on top like a traditional pie.

Making it at home means using real, ripe peaches instead of the syrupy canned fillings found in packaged desserts, and real butter instead of shortening or margarine. It also means you can adjust the sweetness to match exactly how ripe your peaches are.

Quick Tip: Read through the full recipe before you start. The batter and peaches are layered in a specific order in this recipe, not stirred together, so knowing the method ahead of time makes assembly much easier.

Description

A classic Southern-style peach cobbler made with sweet, juicy peaches baked into a soft, golden batter that rises up around the fruit as it cooks. Simple to prepare with pantry staples, this warm, comforting dessert is best served fresh out of the oven, ideally with a scoop of vanilla ice cream.

Ingredients

Peach Filling

Batter

Instructions

  1. Prepare the peaches. In a bowl, toss the sliced peaches with the sugar, lemon juice, and cinnamon. Let sit while you prepare the batter.

  2. Preheat the oven to 175°C (350°F). Pour the melted butter into a 9x13 inch (23x33 cm) baking dish, tilting to coat the bottom evenly.

  3. Make the batter. In a bowl, whisk together the sugar, flour, baking powder, and salt. Add the milk and whisk until smooth.

  4. Layer the batter. Pour the batter evenly over the melted butter in the baking dish. Do not stir.

  5. Add the peaches. Spoon the peaches and their juices evenly over the batter. Again, do not stir — the batter will rise up and around the fruit as it bakes.

  6. Bake for 45–50 minutes, until the top is golden brown and the batter is fully set and cooked through.

  1. Cool slightly. Let the cobbler rest for about 15 minutes before serving, so the filling can thicken slightly.

  1. Serve. Spoon warm into bowls, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.

Note

If your peaches are very ripe and sweet, you can reduce the sugar in the filling slightly. Frozen sliced peaches work well when fresh ones aren't in season — just thaw and drain excess liquid before using. A pinch of nutmeg added to the batter alongside the cinnamon gives a warmer, spiced flavor.

Frequently Asked Questions

Expand All:

Do I need to peel the peaches?

Peeling gives a smoother texture, but it's optional — the skins soften significantly during baking and some people prefer to leave them on for convenience and extra fiber.

Why didn't my batter rise up around the peaches?

This usually happens if the layers were stirred together instead of left separate. Pour the batter first, then spoon the peaches on top without mixing — the batter needs to rise up through the fruit on its own as it bakes.

Can I make this ahead of time?

Peach cobbler is best served warm, fresh from the oven, but it can be baked a few hours ahead and gently reheated in the oven at 150°C (300°F) before serving.
