Prep and preheat. Gather your ingredients and preheat the oven to 230°C / 450°F. A really hot oven is key here — it browns the cheese and crisps the breading fast, before the chicken has time to overcook.

Pound the chicken. Place each chicken breast between two sheets of heavy plastic (a resealable freezer bag works fine) and pound with a meat mallet to an even 1.5 cm (½-inch) thickness. This helps it cook evenly all the way through.

Season and flour. Season the chicken well with salt and pepper on both sides. Using a sifter or fine strainer, dust the flour evenly over the chicken. Don't skip drying the chicken with a paper towel first, or the flour will clump and go pasty instead of forming a light, even coat — I learned this the hard way on my first try.

Bread the chicken. Beat the eggs in a shallow bowl. In another bowl, mix the panko breadcrumbs with half the Parmesan (about 6 tbsp / 40g). Dip each floured chicken breast in the egg, then press firmly into the breadcrumb mixture on both sides. Let the breaded chicken rest on the counter for 10 to 15 minutes — this helps the coating stick properly instead of falling off in the pan.

Fry until golden. Heat about 1.5 cm (½ inch) of olive oil in a large skillet over medium-high heat until it shimmers. Fry the chicken in batches, without crowding the pan, for about 2 minutes per side, until golden brown. It doesn't need to be cooked through yet — it finishes in the oven.

Top and bake. Transfer the fried chicken to a baking dish. Spoon about 2 tablespoons of tomato sauce over each piece — just enough to add flavour, not drown the crust. Top with mozzarella, fresh basil, and provolone, then sprinkle over the remaining Parmesan and drizzle with the last of the olive oil.

Bake until bubbly. Bake for 15 to 20 minutes, until the cheese is browned and bubbly and the chicken is cooked through. Check with an instant-read thermometer — it should read at least 74°C / 165°F in the thickest part. Let the chicken rest for a few minutes before serving so the juices settle.

Note
You can swap the fresh basil for dried Italian seasoning if that's what you have on hand, or leave it out completely and it will still taste great. If you don't have provolone, extra mozzarella works fine too. Serve it over spaghetti, alongside a simple green salad, or just on its own with some crusty bread to mop up the sauce.
