Buttery, garlicky, crispy-edged bread that's ready in about 20 minutes — oven or air fryer, your choice.

Garlic bread is one of those recipes that looks fancy but takes almost no effort — soft butter mixed with garlic, Parmesan, and parsley, spread on bread, then toasted until the edges turn crisp and golden while the middle stays soft. The trick is keeping the butter layer thin and even; too thick, and it soaks into the bread instead of toasting, leaving you with a soggy centre instead of a crispy one.

The smell while it cooks is honestly the best part — garlic and butter melting together smells like a proper restaurant kitchen, and it’s the kind of side dish that turns a simple bowl of pasta or soup into something a bit more special without any extra work.

✅ Quick Tip: Read through the whole recipe once before you start, especially the storage section, if you want to make the bread ahead. This bread also freezes well if you want to prep it in advance.

Description

This version uses soft butter mixed with fresh garlic, finely grated Parmesan, and parsley, spread onto sliced baguette and toasted until the edges crisp up and the Parmesan turns lightly golden. You can bake a full batch in the oven, or use the air fryer for a quicker couple of slices — either method works well, just keep an eye on it near the end, since garlic butter can go from golden to burnt in under a minute once it starts really browning.

It's a simple, forgiving recipe: easy to scale up for a crowd, easy to customise with extra cheese or a pinch of chilli flakes, and easy to make ahead and freeze for later.

Ingredients

Instructions

  1. Make the garlic butter. In a medium bowl, mix the softened butter, minced garlic, Parmesan, parsley, salt, and pepper with a fork until evenly combined (the Parmesan and garlic will still have some texture — that's fine).

  2. Slice the bread. Cut the baguette into slices about 2 cm (3/4 inch) thick, on a slight diagonal for a bit more surface area.

  3. Spread evenly — don't overdo it. Spread a thin, even layer of the garlic butter onto each slice, all the way to the edges. Don't pile the butter on thick or it will soak into the bread and go soggy instead of crisping up — a thin layer is enough once the surface is covered, you don't need to use all the butter if the slices are already coated.

  4. Cook it your way:

    • Oven: Preheat to 200°C / 400°F. Lay the slices butter-side up on a baking tray and bake for 8–10 minutes, until the edges are crisp and golden and the Parmesan is lightly browned.
    • Air Fryer: Preheat to 175°C / 350°F if your model requires it (some don't). Arrange the slices in a single layer with a little space around each one for airflow, and air fry for 5–6 minutes, checking at the 4-minute mark since air fryers vary a lot in strength.
  5. Cool briefly, then serve. Let cool for 1–2 minutes before serving.

Note

Substitution note: if you don't have fresh garlic, use ½–1 tsp garlic powder to taste rather than a full 1:1 swap — garlic powder is more concentrated and won't taste identical to fresh.

You can swap the Parmesan for pecorino or a sharp cheddar. Want it extra cheesy? Add shredded mozzarella on top before cooking for a melty finish. Store leftovers in an airtight container in the fridge for up to 3 days once fully cooled. To reheat, the air fryer at 160°C / 320°F for 2–3 minutes brings back crispy edges much better than the microwave, which tends to leave the bread soft and chewy instead of crisp. You can also freeze un-cooked buttered slices in a single layer, then transfer to a freezer bag once solid — cook straight from frozen, adding a couple of extra minutes.

Frequently Asked Questions

Expand All:

Can I make garlic bread without an oven or air fryer?

The oven and air fryer are the best methods for even, reliable results, but in a pinch you can toast the bread plain in a dry skillet first, then spread on the garlic butter and finish over low heat for 1–2 minutes, watching closely so the garlic doesn't scorch.

Can I use a different type of bread?

Yes — ciabatta, sourdough, or a soft sub roll all work well; just adjust the cooking time slightly for thickness.

Why did my garlic bread turn out soggy?

Usually the butter layer was spread too thick, or the oven/air fryer wasn't fully preheated. Keep the layer thin and even, and make sure the appliance is properly heated before cooking.
