What Makes This Ratio Work
In general recipe development, many lemonade recipes use around 3/4 to 1 cup lemon per 6 cups water – we use less here because watermelon provides additional liquid and mild sweetness. Watermelon is 92% water and mildly sweet, so in our testing, 1.5 cups lemon made the drink noticeably too tart. Our tested balanced ratio uses 1/2-3/4 cup lemon per 5-6 cups watermelon. In our testing, blending watermelon separately first gave less foam and cleaner flavor than blending with lemon juice together.

Blend watermelon alone [2 min] - Add 800g watermelon to blender, blend high 60-90 sec until smooth. Visual cue: uniformly pink, light foam. Strain if pulp-free desired.

Make quick syrup [2 min] - In 3L pitcher, add 1 cup warm water (~50C/122F) + sugar. Stir 60-90 sec until fully clear, no grains.

Combine and balance [3 min + 15 min optional chill] - To the pitcher with syrup, add 5 cups cold water and 3/4 cup lemon juice. Then add blended watermelon juice. Stir well. For balanced sweetness: Default - use the complete prepared syrup containing 100g sugar for approximately 2.4L as stated. This is balanced for most watermelons. For exceptionally sweet watermelon only, begin with about two-thirds of the prepared syrup (containing ~67g sugar) and add more to taste. If too tart, add a small amount of cold water as needed and adjust final serving yield accordingly (adding water will increase total volume above ~2.4L). Refrigerate 15 min optional for best flavor.
