Let the cupcakes cool in the tin for 10 minutes, then move them to a wire rack to cool completely, about 30 minutes, before frosting. Frosting warm cupcakes will just make a melted mess.
Coconut Buttercream Frosting

You can swap the coconut milk in the frosting for heavy cream (double cream in the UK) if you want a milder flavour. Leftover frosted cupcakes keep in an airtight container in the fridge for up to 4 days — let them sit out for about 20 minutes before serving so the frosting softens again. Never reheat a frosted cupcake, since the frosting will just melt off. If you have unfrosted cupcakes left over, a few seconds in the microwave brings back their softness. A very short stint in the air fryer, about 30 seconds at 140°C (285°F), can work too if you want a slightly firmer edge, but keep a close eye on it — cupcakes dry out fast under direct air-fryer heat.
